This is a perfect Friday night dinner when you just don't feel like cooking and kids love nothing more than breakfast for dinner, truth be told who doesn't?
1/2 pound of turkey bacon fried to desired crispness
1 egg per person cooked over easy
Home made chipotle poco de gallo
2 tomatoes peeled
1/4 yellow onion minced
1/2 chipotle pepper minced very fine
1 clove garlic minced
Juice from half a lemon
1 teaspoon salt
1/2 teaspoon black pepper
Baby spinach leaves
Sour cream
Multi grain Flat bread wraps or whole wheat tortillas
Fry the turkey bacon in a large skillet and set aside on a plate layered with paper towels. Make the poco de gallo and set aside to macerate. Cooke the eggs and set the table. Set everything out as a build your own wrap and dinner is served. That was one of the easiest meals I have ever made!
