Sometimes I need a quick meal and this is a good recipe that is fast
1 package boneless skinless chicken breast cubed
1 yellow and 1 orange bell pepper cut into strips
1 yellow onion cut into strips
5 small white mushrooms cut into thin slices
1 can Hormel turkey chili
Juice from half a lemon
8 oz Velveta. Cheese
1 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons garlic powder
1 tablespoon each cumin and chili powder. A taco seasoning packet will be almost the same
8 whole wheat tortillas cut into strips
Baby spinach leaves
Put the chicken in a large skillet with some olive oil and start to brown over medium high heat.leg brown for 5 minutes then add the spices. Let cook for 1-2 more minutes. Add the onions, peppers and mushrooms. Let cook until chicken is cooked through, about 10 minutes. Add the chili, lemon juice and the Velveta Let cook until cheese has melted. Spread a thin layer of the sauce on the bottom of a greased 13"x9" baking dish. Lay some tortilla strips over that. Layer some spinach over that and repeat until all ingredients are gone. Bake in a 400 degree oven until bubbly.
