Shrimp Scampi with garden spaghetti

When there is little time to cook and I need to make something in a rush this is a good dish that everyone will love.

1 lb medium shrimp pealed and deveined
1 small yellow onion minced
2 cloves garlic minced
1 cup hot water with a chicken bullion cube or 1 cup of chicken stock
Juice from one lemon
2 tablespoons butter
Salt and pepper to taste
1 teaspoon Old Bay seasoning
1/4 teaspoon cayenne pepper
2-3 tablespoons fresh parsley roughly chopped
Olive oil

Start boiling the water for the pasta. While this is coming to a boil peal the shrimp and mince the onions, garlic and parsley. Put the pasta in boiling water and warm a 10 inch skillet over medium high heat. While this pan is preheating put the shrimp in a bowl and coat with olive oil, salt, pepper, Old Bat and cayenne. Add this to the hot pan and let cook until the shrimp start to curl and turn pink. Remove them from the pan and add the onions and garlic. Let them cook until the onions start to become tender. Add the liquid and let reduce for about 5 minutes. Add the shrimp back in and the butter. Finish with parsley. Drain pasta and toss into the sauce. This a very delicious shrimp meal that will keep them coming back for more. For more on this recipe or any others please email me at aleaia.leach@gmail.com
