I know salmon is not a food that most kids like but this recipe is sure to make the dinner table cheer!
1 1/2 pounds salmon
3 tablespoons pepper cooking sauce
1 tablespoon basalmic vinegar
2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1 medium zucchini chopped
1 medium yellow squash chopped
1 large sweet potato pealed and chopped
1/4 olive oil
2 teaspoons salt
1/2 teaspoon black pepper
1 tablespoon Moroccan 7 spice
1/2 teaspoon crushed red pepper flakes
2 teaspoons whole cumin seeds
Marinate the salmon in the pepper sauce, olive oil and spices. In the meantime chop the vegetables and coat with the oil spice mixture and place in a preheated 375 degree oven. After the fish has marinated in the refrigerator for 10 minutes take it out and place it in a baking dish and put in the same oven with the vegetables. Give all of this about 30 minutes to bake. While that is baking cut some prices of whole grain French bread and place on a baking rack and place in the oven. When the fish is flaky and the vegetables are fork tender take them out and turn the oven to broil at 500 degrees. Let the bread get Breton and toasted. Take this out of the oven and rub with a garlic clove. This is great way to get your family to eat fish and vegetables that are actually good for them.
