This has been a long crazy week and an even crazier weekend. Sorry I have nothing to blog about. I did make pancakes this morning and can offer that recipe now without pictures
1 cup whole wheat flour
1/4 cup wheat bran
1 egg beaten
1 tablespoon sugar
3 teaspoon baking powder
1/4 teaspoon salt
2 tablespoon vegetable oil
3/4 milk
1/3 cup crasins
2 teaspoons ground cinnamon
Beat the egg with a whisk until it is fluffy. Add the dry ingredients and mix until combined. Add the oil and mix until combined. Do not over mix or will have concrete pancakes. Fold in the crasins and let batter sit for 5 minutes. Place one ladle full into a small sauté pan over medium heat, when the side become dry looking and the top become bubbly then flip it and let it cook on the other side. This should be about 3-5 minutes on each side. Serve with warm maple syrup if desired.
