Nothing says summer like grilled hot dogs with chili sauce and French fries
1 package all beef hot dogs or turkey hot dogs or two packages or turkey bratwurst sausages.
1 package whole grain hot dog buns
1 large onion finely minced
1 clove garlic finely minced
1 1/2 tablespoons chili powder
1 teaspoon each cumin, salt and black pepper
1 package morning star meal starter crumbles or 1 pound lean ground meat
1/2 cup ketchup
2 tablespoons yellow mustard
1 chipotle pepper finely minced (use 1/4 teaspoon cayenne pepper if you don't have chipotles)
1/2 cup water
4 yellow potatoes cut into match sticks
1 large sweet potato cut into match sticks
1/4 cup olive oil
Salt and pepper to taste
1 teaspoon garlic powder and ground cumin
Shredded cheese of your choice if desired
First things first get the potatoes peeled and cut into sticks coat then in the oil, salt, pepper, garlic powder and cumin. Place in a single layer on a baking sheet and put into a 425 degree oven. Next is the chili sauce. Place the onions in a 2 quart sauce pan with 1-2 tablespoons olive oil. Let cook until you smell them about 3 minutes then add the garlic. Let that cook for another 3 minutes. Add the meal crumbles. If you are using real meat add it with the onions leave out the olive oil and don't forget to drain the extra fat before this next step. Add the chili powder, cumin, salt and pepper. Let this cook for about 5 minutes be careful not to let the spices burn. Add the ketchup, mustard and water. Mix well and simmer over medium low for 10-15 minutes. While this is cooking turn the oven to broil to crisp the fries and grill the dogs. I use the counter top grill but you can grill them outside just the same. If you don't have a grill you can place them on a cooling rack over a baking sheet and bake them with the fries. This is a great guilty feeling meal with all the feels of a homemade dish. For more on this recipe or any others please email me at alesia.leach@gmail.com
