Pizza Night 2 with Rustic Bread Sticks

Every house has a "go to" meal and pizza is ours


1 cup whole wheat flour
1 cup unbleached all purpose flour
1/4 wheat bran
1 tablespoon sugar
1 tablespoon garlic powder
1 teaspoon salt
1/2 teaspoon cayenne
1 teaspoon fresh thyme and fresh rosemary
1 cup of very warm water
2 tablespoon dry active yeast

1 can diced tomatoes
2 teaspoons garlic powder
1 teaspoon salt
1/4 teaspoon black and cayenne pepper

Diced red, yellow and orange bell pepper
4 white button mushrooms diced
1/2 yellow onion minced
1-2 cups fresh baby spinach leaves
1 cup shredded mozzarella cheese

1/4 cup + 2 tablespoons olive oil
Salt and garlic powder to taste

Place the yeast in the warm water mix well and set aside to bloom. (get foamy). While the yeast is working mix all of the dry ingredients together. After the yeast has bloomed for about 10 minutes and looks foamy on top pour the mixture into the dry ingredients. If it does not form a soft dough ball and pull away from the sides add flour little by little if it is too wet or add water little by little if it is too dry. Form a soft ball with the dough then dump onto a liberally floured surface. Kneed the dough about 10 times or until when you push your finger in the dough bounces back. Place the 1/4 cup of olive oil in the bowl that was used to mix the dough and coat the dough ball with oil, cover and place in a warm place to rise. While this is rising place the can of tomatoes, salt black and cayenne pepper and garlic powder in a 2 quart sauce pan and let simmer until most of the liquid has evaporate. While the sauce is cooking dice all of the vegetables and grade the cheese. Once the dough doubles in size punch it down and place on a liberally floured surface and roll flat about 1/4 inch thick. Place the dough on your baking sheet and place it in a 400 degree oven. When using a wet sauce like the tomatoes it is best to bake the crust before building the pizza or the dough will never cook. Take the dough out after about 5 minutes you don't want it to be done all the way. Take a potato masher to the tomatoes mixture then spread it on the pizza, sprinkle all of the peppers,onions and mushroom over the sauce. Lay the spinach on and sprinkle with cheese. Drizzle with olive oil of desired and place back in the 400 degree oven. Let this bake 15-20 minutes at 400. With the extra dough free form some bread sticks and place on a cooling rack over a baking sheet and place in the 400 degree oven. Let bake with the pizza. Once they are cooked almost through about 15 minutes. Take the bread sticks out and brush with the 2 tablespoons olive oil, salt and garlic powder. Place these back in the oven and turn your oven to broil 500 degrees. Remove the bread sticks once they are golden brown. Let the cheese brown on the pizza then remove it. Let cool for 5 minutes before you try to cut it unless you like pulling molten cheese off your pizza cutter rather than keeping in on the pizza. This is a great pizza recipe that everyone here loves.
