Well we all know that most people love pizza but we get sick of the same old same old over again so Stromboli is great way to get that pizza fix and still have something different.
Dough
1 cup whole wheat flour
1 cup unbleached all purpose flour
1/4 cup wheat bran
1 tablespoon garlic powder
2 tablespoons active dry yeast
1 1/2 cups very warm water
2 teaspoon dried basil
1/4 teaspoon cayenne pepper
1 teaspoon salt and pepper
Filling
1 medium yellow onion
1/4 each red, yellow and orange bell pepper diced
1 can tomatoes
1/4 cup white mushrooms diced
1/2 bunch kale chopped
Salt and pepper to taste
1/4 teaspoon cumin
1/4 cayenne pepper
2 tablespoons olive oil
Shredded mozzarella cheese
To make the dough put all of the dry ingredients in a large mixing bowl except yeast. You will bloom the yeast in the warm water for ten minutes. Once the yeast water slurry starts to foam add it to the dough and mix until a tight dough ball forms. Place on a flour dusted surface and knead for 5 minutes then coat bowl with olive oil roll dough ball in oil, leave dough in bowl cover with a towel and place in a warm spot to rise while the dough is rising place all the diced vegetables and spices in a 10 inch skillet over medium heat except the tomatoes let cook until vegetables are tender then add the tomatoes and half a can of water and let simmer over medium high heat until liquid have evaporated. While vegetables are cooking roll out the dough on a floured surface to about 1/4 inch thickness then place on a flat baking pan. It is going to hang over the edges so don't worry about that. Add a thin layer of shredded cheese then add the filling add another thin layer of shredded cheese and fold the edges over starting with the shorter ends first then the long edges. Slit some steam holes with a knife and brush with a beaten egg. Bake in a 425 degree oven until bubbly and golden brown. Get creative with your fillings. Put anything you want inside but I find this is a great way to get the little ones to eat and even enjoy their vegetables even the green ones. You could even try some broccoli florets and cheddar cheese in place of the other filling with some slices of turkey or turkey bacon that was crisped up in a pan. The possibilities are endless!
