Recipe for baked penne

One medium onion chopped
1/4 green bell pepper chopped
3-4 small carrots diced
1/2 bunch of kale cleaned and chopped
Salt and pepper to taste and a pinch of nutmeg.
1 bag Morning star meal starters
1 tablespoon fresh basil
1 jar organic all natural marinara sauce
2 tablespoons extra virgin olive oil
Whole wheat penne pasta
Shredded mozzarella and cheddar cheese


Sauté vegetables salt pepper and nutmeg in olive oil over medium high heat until tender add morning star meal starter and warm through, add sauce and simmer while your pasta is boiling in a large pot of salted boiling water. Boil for about ten minutes and drain, mix sauce with noodles back in the pot used to boil and place in a 2 quart casserole dish sprayed with non stick spray, top with shredded cheese and bake at 375 degrees Fahrenheit for 30-35 minutes or until bubbly and golden brown. This is a great way to get your family to eat a plethora of different vegetables and not whine about it. While it is baking there are plenty of other things to be done like the dishes, laundry and helping the kids with homework. A mother's job is never done. But at least dinner is!
