Even though I prefer a vegetarian diet most of the time, sometimes I have to give the people what they want, so tonight I made loose meat pita sandwiches with
1 pound 90/10 ground beef
1/2 red bell pepper
1/2 green bell pepper
1 small yellow onion
Some of the pesto that I made the other night ( this recipe can be viewed in the "pizza night" post)
1/2 cup of white mushrooms
Spices for the meat
1 tablespoon each
Chili powder
Garlic powder
Coriander powder
Moroccan 7 spice The ingredients in this spice blend are as follows; allspice, black pepper, cardamom, cinnamon, cloves, coriander, nutmeg (you can also use all spice if you have that on hand.)
1 tsp each
Salt
Black pepper
1/4 teaspoon cayenne pepper and turmeric
3 whole wheat pitas cut in half
Slices of the cheese of your choice. I had 6 slices each cheddar, monterey jack and mozzarella
Now down to business,
Put the beef in a bowl and mix spices in it to coat every inch of the meat and then set this aside while you dice all the vegetables. Heat a large skillet on medium heat and put all ingredients in the pan together you may want to add a couple teaspoons of extra virgin olive oil since the beef is so lean. Cook until beef is brown and vegetables are tender. Fill the pitas with one slice of each cheese a tablespoon of pesto and the meat mixture. I went one step further and put them on the George Forman countertop grill to get the bread nice and crispy and the cheese melted. This makes for a great Saturday night meal and it's makes the family happy.
