Crab Cakes and French Fries

Who doesn't love a good crab cake and fresh French fries? I know my family does! Here is how we get it started


French fries

4 potatoes pealed and cut into desired fry size ( I have found that if they are too thick they will take forever to cook)
1 medium sweet potato prepared the same as the regular potatoes

3 tablespoons olive oil
1 teaspoon each of
Salt
Chili powder
Garlic powder
1/2 teaspoon black pepper

Crab cakes

2 cans crab meat
1 can of tuna
1/2 cup red bell pepper minced
1/2 medium yellow onion minced
2 cloves garlic minced
6 green onion tops sliced thin
2 eggs
1/2 cup bread crumbs
2 tablespoons Dijon mustard
2 teaspoons each of
Chili powder
Cumin
Old Bay seasoning
Turmeric
1 teaspoon salt or to taste
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper or to taste


Toss cut fries in oil and bake on a flat baking tray in a 425 degree oven until soft and fork tender then turn on the broiler and let them get nice and crispy!!

While the fries are baking in he oven mix all of the crab cake ingredients together in a bowl just like you are making a meat loaf and form them into patties. Heat 2-3 tablespoons of extra virgin olive oil in a 10 " skillet place the crab cakes in the pan cook on one side for 3-5 minutes then flip and do the same thing on the other side. Serve hot and with your favorite doping sauce.



These have to be the best crab cakes that I have ever eaten. There is nothing more gratifying than cooking a delicious meal and having your family tell you how good it is as they almost lick their plates.
