Smoked Sausage Casserole

This is a fun Monday meal that will keep the forks moving.

1 package smoked turkey sausage chopped
1 cup white mushrooms roughly chopped
1 medium onion chopped
2 cloves garlic minced
2 tablespoons olive oil
3 tablespoons butter
3 tablespoons flour
2 cups milk
1 cup shredded sharp cheddar
1 cup frozen peas
1 teaspoon cumin
Salt and pepper to taste
1 bag whole wheat egg noodles

Add the olive oil to a heavy bottom skillet over medium heat. Add the onions, mushrooms and garlic. Let this cook for 5 minutes. Add the sausage and let cook for another 3-5 minutes. Remove this mixture from the pan and set aside. Melt the butter in the same pan and add the flour. Let this cook for 1 minute sprinkle in the cumin, salt and pepper. Whisk in the milk and let simmer until thickened. Reintroduce the sausage mixture, remove from heat and add the cheese and peas. Boil the noodle for 8-10 minutes or until just tender. Drain and mix with the cream sauce mixture. Grease a baking dish and spread the mixture in the dish. Sprinkle on the bread crumbs and bake at a 375 degree oven until golden brown and bubbly.
