Mexican Style Lasagna

Although lasagna is an Italian favorite it is always nice to reinvent this delicious meal.

1 package boneless, skinless chicken breast cubed
1 onion minced
1 green bell pepper minced
2 cloves garlic minced
1 can black beans drained and rinsed
1 can diced tomatoes
1 can Rotel
1 bag frozen corn
1 cup water
2 tablespoons olive oil
2 teaspoons cumin and chili powder
Salt and pepper to taste
5 whole wheat tortillas cut into strips
2 cups shredded cheese of your choice

Add the olive oil to a heavy bottom skillet. Add the onions and green peppers. Let this cook for about 5 minutes then add the chicken and garlic. Let this cook for 10 minutes or until the chicken is no longer pink. Add the tomatoes, Rotel, beans, corn and water. Let this cook while you cut the tortillas into strips. Once the sauce in the pan has reduced by half ladle about 1/3 of the sauce into the bottom of a 13x9 inch baking dish. Layer on a third of the cheese and then half of the tortilla strips. Repeat this until you end with cheese on top. Bake this in a 375 degree oven until bubbly and golden brown. Serve this with sour cream and guacamole.
