Tagine is a delicious slow cooked dish they can be made any way you choose .
1package boneless, skinless chicken breast cubed
1 large onion sliced
1 red bell pepper sliced
4 large carrots quartered
1 zucchini quarter and seeded
1 yellow squash quartered and seeded
1 lemon cut into slices
Zest from a lemon
1/2 cup chopped parsley
Parsley stems
2 tablespoons house seasoning
Pinch saffron
1/2 cup water
3 tablespoons olive oil
Place the Tagine on the stove top over medium low heat. Add the parsley stems and onions.Coat the chicken cubes in the spices and add them to the Tagine. Add the vegetables and half of the parsley on top of the chicken. Add the saffron to the water (make sure it is warm) let it bloom for a few minutes. Cover the Tagine and let it cook for at least 1 1/2 hours. Once the vegetables are tender turn off the heat and add the lemon zest and the rest of the parsley.
