Homemade Linguini with Basil Pesto and Grilled Chicken

Homemade pasta is a labor of love that will not go unrecognized.

1 3/4 cups a semolina flour
3 eggs
1 tablespoon olive oil
1 teaspoon salt
1 4 ounce package fresh basil
1 large package baby spinach leaves
1/2 cup roasted almonds
6-7 cloves of garlic
2 tablespoons fresh mint (optional)
1/2 cup greatest Parmesan
1/4 cup olive oil
Salt to taste

3 chicken breasts sliced into cutlets. Season to taste

Most stand mixers come with pasta making attachments so this makes pasta creating a little easier. Measure out the flour on the counter top. Create a well in the center and place the eggs, olive oil and salt in the well. Beat the eggs with a fork bringing in a little of the flour at a time. Once you start to see a dough form start mixing it with your hands. Add a tablespoons of water if the dough is too tight. Kneed the dough for about 10 minutes. Wrap the dough ball in plastic wrap and set on the counter for at least 30 minutes. While the dough is resting place the basil,spinach, mint, almond and cheese in the blender. Puree the mixture. Slowly stream in the olive oil while it is mixing. Cover and set aside. Now that the dough had rested cut it into 6ths. Place the roller attachment on the mixer on setting number 1. Flatten a portion of the dough and run it through the roller. Fold the sides in to form a rough square shape and run it through again. Repeat this step several times until the dough becomes very soft and smooth to the touch. Now the rollers can be adjusted to the number 2 setting and run the dough through the rollers not folding any more. Continue to do this adjusting the setting up a number until you get to 7. The dough will be very thin and long.Remove the roller attachment and place the cutting attachment on the mixer. Run the long strip of dough through the cutter to get your pasta. Place some wooden spoons in the top of your upper cabinet with the handle sticking out with the head under something heavy. Hang the noodles on the handle to dry while you complete all the steps with each portion. Once all the noodles are made and drying season the chicken and place it on a counter top grill. Bring a large pot of water to a boil. Place the pasta in and boil for 2-3 minutes. Drain the pasta and mix with half of the pesto. (Save the rest to put on grilled cheese sandwiches)
