This is delicious Latin American dish that is a tasty way to eat chicken and rice!
1 package chicken legs
1 onion chopped
1 green bell pepper chopped
2 cloves garlic minced
1 clove garlic smashed
1 teaspoon dried oregano
1 teaspoon cumin
1/2 teaspoon paprika
1 pinch saffron
1 can diced tomatoes
1 cup brown rice
2 cups chicken stock
3 tablespoon vegetable oil
2 bay leaves
Add the oil to a heavy bottom skillet or ditch oven. (make sure it is oven safe) over medium high heat. Brown the chicken then set aside. Add the onions and peppers to the pan and let cook for about 4 minutes then add the garlic. Add the chicken back to the pan then add the rice, tomatoes and spices, and stock.
