Vegetable Stir Fry

Stir fry is a good way to get the family to eat their vegetables.

1 cup butternut squash sliced thin
2 carrots cut into sticks
1/2 green bell pepper cut into strips
1 small onion cut into strips
1 bunch asparagus cur into1 inch pieces
2 cups chopped fresh broccoli
1 tablespoon ground fresh ginger
1 tablespoon corn starch
1/4 cup water
1 tablespoon each teriyaki and soy sauce
1/2 cut vegetable stock
2 tablespoons coconut oil

1cup brown minute rice
1 3/4 cups water

Start the rice first then add the coconut oil to a heavy bottom skillet over medium high heat. Add the vegetables and stir fry instil they start to become tender. Add the pepper, garlic powder and ginger. Stir together the corn starch, water, soy sauce bad teriyaki sauce. Mix it with the vegetable stock. Pour this over the vegetables and cook until a sauce forms. Place the rice on a serving platter. Pour The vegetables and sauce over the rice and serve hot!
