Fresh Summer Salad with Lemon Vinaigrette

My mom gave us some left over chicken and rice casserole and so undecided to warm that for dinner tonight and throw together a beautiful summer salad to accompany it.

1 bag romain lettuce
2 large handfuls baby spinach leaves
4 boiled eggs smashed with a fork
1 5oz package Athenos feta cheese
1/2 cup almonds roughly chopped
1/2 cup strawberries topped and diced

1/4 onion finely minced
2 cloves garlic minced
1 teaspoon each salt, cumin and dried oregano
1 tablespoon Dijon mustard
2 tablespoons red wine vinegar
Zest and juice from 1 lemon
1/4 cup olive oil

Mix all of the dressing ingredients together with a fork or a whisk and set aside. Place all of the salad ingredients in a large mixing bowl and toss together. Top with croutons if desired. Drizzle with the vinaigrette and enjoy!
