Meat Loaf is a family friendly go to for over 50 years and still remains a table side favorite! This is a spicy, cheesy spin on an all American classic.
2 pounds ground beef (80/20)
1 small onion finely minced
2 cloves garlic minced
2 eggs
1 can Rotel
3/4 cup rolled oats
1 teaspoon cumin
1 teaspoon dried oregano
2 teaspoons salt
1 teaspoon black pepper
1 1/2 cups grated cheddar cheese
Take all of the ingredients and mix then together well. Place them in a loaf pan and place the pan in a 375 degree oven for 60-70 minutes or until the meat is no longer red. For the potato bake I used the left over potato filling from last night slathered a layer of it in a small baking dish, added some cheese cubes and slathered another layer on top. Sprinkle with bread crumbs, drizzle with olive oil and bake at 350 for 30-40 minutes or until golden brown.
