Stuffed Squash

This is a delicious way to eat your vegetables.

6 yellow squash or zucchini (or mix and match)
2 pounds beef breakfast sausage
2 cups roasted garlic bread crumbs
2 cloves garlic minced
2 jars marinara sauce (or make your own)
2 cups Italian blend shredded cheese

Cut the ends off of the squash and split lengthwise. Scoop the seed out with a Spoon into a large mixing bowl. Add the bread crumbs, 1 cup of the cheese, garlic and sausage. Mix well. Lay the squash halves in two 13x9 inch baking dishes. Stuff the hollowed out squash with two tablespoons filling. Dump on jar or sauce over each pan. Cove with foil and place in a 375 degree oven for 45 minutes. After 45 minutes remove the foil and sprinkle on the remaining cheese and bake until the cheese melts. Turn on the broiler until the cheese becomes golden brow and bubbly. This is another good way to get the family to try new vegetables and to get the kids involved in helping with dinner.
