Beef Stroganoff

This is a simple take on this classic Russian dish.

About 3 pounds ground chuck
1 medium onion minced
1 red bell pepper minced
3 cloves garlic minced
1 8 ounce package of sliced mushrooms
3 tablespoons butter
2 tablespoons drippings from the cooked beef
5 tablespoons flour
Salt and pepper to taste
2 cans beef broth
1 cup all natural sour
1 bag whole wheat egg noodles

Add the ground chuck, onions, peppers and garlic to a heavy bottom skillet. Let the meat start to brown. Add the mushrooms and let the meat brown completely, drain and remove from pan. Add the butter and drippings to the hot pan over medium heat. Sprinkle the flour in and whisk to combine. Add the beef broth and bring to a simmer. Let cook until the sauce starts to thicken. Add the browned meat in and let cook a few more minutes. Add the sour cream and mix well. While all this is cooking boil the egg noodles according to the package directions. Mix the sauce with the cooked noodles and serve. This is just as easy as those store bought meal helper kits and it is twice as good. Curried Pumpkin Soup and Links in a Blanket

Pumpkin is not just fit pie. This is a delicious soup that will have them asking what it is .

7 carrots peeled and chopped
1 medium onion chopped
4 cloves garlic minced
4 teaspoons grated ginger
2 tablespoons butter
2 tablespoons vegetable oil
2 teaspoons curry powder
4 cups vegetable broth
1 can coconut milk
2 29 ounce cans pumpkin puree (not pumpkin pie mix)
1 teaspoon salt
2 pinches sugar

Add the butter and oil to a large pot . Add the onions, garlic, ginger, carrots and curry powder. Let this cook for 7 minutes. Add the vegetable broth and bring to a boil. Reduce heat to medium low. Cover and simmer for 10 minutes. Add the pumpkin, coconut milk salt and sugar. Let cook for another 2 minutes. Place this in the blender. Blend until smooth. Add it back to the pot and heat through and serve. Take 4 turkey sausages and cut them in half. Roll them in Cresents dough with cheese slices of your choice. Chicken Burgers with Roasted Rosemary Potatoes

Burgers and fires can get really boring but when you make it into to something your family will never forget.
1 package boneless, skinless chicken breast
1/2 onion finely minced
1/4 red bell pepper minced
2 tablespoons chopped parsley
1 teaspoon cumin
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 egg
5 potatoes cubed
2 tablespoon fresh rosemary
1 teaspoon each dried basil and oregano
2 teaspoons salt
1 teaspoon black pepper
1/4 cup olive oil
Add the chicken to the food processor and buzz until meat is ground. Place in a large moving bowl and add the onion, pepper, spices and egg. Form into patties and passage in the refrigerator. Chop the potatoes. Coat the potatoes with olive oil, spices and herbs and spices. Place in a 400 degree oven for25-30 minutes.  Size the burgers with olive oil and Pisces on the counter top grill until cooked through about 15 minutes.Serve with lettuce, tomatoes, onions and cheese.
