Crispy Seafood Spring Rolls

This was a fun new recipe for me. I hope you enjoy making it as much as I did!

1 bag rainbow or broccoli slaw
1/4 cup sliced mushrooms
1/2 green bell pepper cut into strips
1/2 small yellow onion minced
2 teaspoons apple cider vinegar
1 tablespoon low sodium soy sauce
2 bags salad shrimp thawed
1 package lump or imitation crab meat cubed
1 package of mushroom flavored rice
Spring roll wrappers
1/2 inch vegetable oil for frying
Water with a pastry brush

Cook the rice according to package directions. Add the slaw, vinegar and soy sauce to a large microwave safe bowl. Mix well and microwave for 3 minutes. Remove and stir well. Microwave for another 3 minutes. Remove and add the onions, pepper, mushrooms and seafood. Stir well. Once the rice is done add it to the filling and mix well. Heat the oil in a large heavy bottom pan over medium high heat. Lay the spring roll wrappers on a flat surface and brush with water, turn it over and brush it again. Add about a tablespoon of filing to the wrapper and wrap it like a burrito being sure to tuck all of the open edges in. Add the rolls seam side down in the oil. Let brown on one side then turn and brown the other side. I do not suggest to roll them and set them aside or they will stick to your surface.
