Creamy Tomato Sauce with Penne and Tuna Meatballs

This is a fun dish that helps reinvent spaghetti and meatballs.

1 box penne or you favorite pasta (whole wheat or whole grain is best)
1 can diced tomatoes
1 can chicken broth
1/2 cup water
1 small yellow onion minced
2 cloves garlic minced
1 small zucchini diced fine
3 small carrots diced fine
1/2 cup minced white mushrooms
1/4 cup green bell pepper minced
2 tablespoons dried basil
Salt and pepper to taste
Juice from half a lemon
4 oz cream cheese

2 cans tuna
2 cloves garlic minced
1 egg
1/4 cup rolled oats
1 tablespoon basil (dried)
Salt and pepper to taste

First get all the vegetables cut up and it in a large heavy bottom skillet (minus the garlic) with a tablespoon of olive oil. Let this cook for about 10 minutes add the garlic and the tomatoes and spices. Now add the liquid, cover and simmer while making the tuna balls. Mix all the ingredients for the Tuna meatballs together in a medium bowl. Form these into balls and add them to the sauce. Cover and simmer until sauce reduces. This is the time to boil the noodles. Add the cream cheese to the sauce and remove from the heat. Stir in the cheese and serve it over the pasta. This is delicious new way to eat pasta!
