When Monday has taken its toll and you need a quick meal that is nutritious and easy. This is the one for you!
2 cans white tuna in a water
1/2 orange bell pepper minced
1/4 onion minced
4 hard boiled eggs smashed
2 cloves garlic pasted
1 tablespoon hone
1 tablespoon dried dill
Salt and pepper to taste
3-4 tablespoons olive oil
Zest from 1 lemon and juice from half the lemon
3 whole pitas cut in half
1 cup shredded cheese
In a medium mixing bowl combine the tuna, vegetables, garlic, honey, zest and juice, eggs and spices.Sprinkle some cheese in the bottom of the pitas, spoon in some tuna salad. Top with more cheese and place on the counter top grill or sandwich press.
