Taco Casserole

When I am looking for a quick fix meal this is a great way to get them fed fast and still keep it healthy!

1 green bell pepper finely chopped
1 orange bell pepper finely chopped
1 onion minced
3 cloves garlic minced
1 bag veggie crumbles
1 can vegetarian refried beans
1 can diced tomatoes drained
1 can green enchilada sauce
5 whole wheat tortillas cut into strips
8 ounce shredded sharp cheddar
8 ounces shredded marble cheddar
2 teaspoons cumin
Salt and pepper to taste
2 tablespoons olive oil

Add the olive oil to the bottom of heavy bottom skillet over medium heat. Add the onions and peppers. Let these cook for 3-5 minutes or until the vegetarian become tender. Add the veggie crumbles. Let this cook for another 5 minutes. Add the garlic, beans and the tomatoes. Stir well and add the enchilada sauce. Let this cook for another few minutes. In a 13x9 inch baking dish layer some of the veggie bean mixture. Sprinkle 1/3 of the cheese then layer some of the tortilla strips. Continue this layering process until all of the ingredients are gone. Place in a 375 degree oven for 15-20 minutes or until bubbly and golden brown.
