Don't be afraid of healthy ready made foods when it's late and you have had a long day. This is one of my favorite quick dinner go to's!
1 store bought oven roasted chicken shredded
1 bottle of your favorite barbecue sauce
1-2 Caesar salad kits (any brand will do)
Whole wheat tortillas
1 bag frozen tater tots
Shredded cheese of your choice (mild cheddar goes very well)
Start by placing a single layer of tater tots on a baking sheet and place in a 450 degree oven for 12-15 minutes. Shred the chicken into a 3 quart sauce pot. Add the barbecue sauce and stir well. Warm this over medium heat until warmed through. Sprinkle the cheese on the tortillas and spoon the barbecue chicken, roll these up. Mix the salad in a large mixing bowl. (I like to sprinkle mine with some extra shredded Parmesean cheese.) This is a healthy meal that the kids, the whole family, will love time and time again!
