We all have this nights when we have to walk in and turn around and walk out, this recipe is quick and healthy!
1/2 medium onion chopped
1 green bell pepper chopped
1/2 zucchini chopped
1 clove garlic minced
2 cans diced tomatoes
1 bag veggies crumbles
1/2 cup grated parmesan cheese
2 teaspoons each dried oregano and basil
Salt and pepper to taste
1 box whole wheat spaghetti noodles prepared according to package directions
Add the onions, peppers and zucchini to a large heavy bottom skillet over medium heat, drizzle with olive oil and let this cook for a few minutes, add the garlic and the veggie crumbles. Let tis cook for another 5 minutes. Add the tomatoes, salt, pepper and dried herbs. Let this cool for about 10 minutes. While this is cooking boil the noodles. Add the cheese to the sauce. Drain the noodles and mix about half of them in with the sauce. (I freeze the other half for nights like this, you can just throw the frozen noodles in boiling water for a couple of minutes and they are ready to go).
