Beef stew is a great slow cooker meal that will fill their dinner bowls without breaking the bank!
2-3 pounds beef roast cut into 1 inch cubes
2 tablespoons flour
1 quart chicken broth
4 quarts water
1 tablespoon oregano
1 tablespoon marjoram
3 bay leaves
Salt and pepper to taste
5 carrots peeled and roughly chopped
5 potatoes peel and roughly chopped
1 medium onion roughly chopped
5 ribs of celery roughly chopped
4 tablespoons olive oil
Liberally salt and pepper the beef then dust with flour. Add 2 tablespoons olive oil to a heavy bottom skillet over medium high heat. Brown the meat on all side then place them in the slow cooker. Add the onions, carrots and celery. Add the rest of the olive oil, oregano and marjoram and cook for 5 minutes. Pour the chicken broth in the pan and scrap the bottom of the pan to get all the flavor off. Pour this mixture into the slow cooker. Add the potatoes and the water.
