Philly Cheese Steak Wraps with Potato and ButterNut Squash Fries

Cheese steaks and French fries is a restaurant combination that we have all grown to crave.

2-3 pounds top sirloin steak
1/2 green, red, yellow and orange bell peppers
1 medium yellow onion
1 cup white mushrooms
2 tablespoons coconut oil
2 teaspoons salt
1/2 teaspoon black pepper, cumin, chili powder
5-7 whole wheat tortillas
Sliced cheese of your choice


5 potatoes
1/2 large butternut squash
1/4 cup olive oil
1 teaspoon Moroccan seven spice
1/2 teaspoon black pepper and cumin
Salt to taste


Clean and peal the potatoes and quash. Cut the neck off of the squash and use this part for the fries. Cut the potatoes into fries and coat all these well with the oil and spice mixture. Place these on a large baking sheet. Place this in a 400 degree oven. Cut the onions, bell peppers and mushrooms into strips. Take the steak and slice it at a 45 degree angle into thin strips. Sprinkle both side of the meat with the spice mixture. Add the coconut oil to a large heavy bottom skillet preheated on medium high heat. Add the vegetables. Let this cook for 5-7 minutes or until the vegetables become tender. Add the meat and cool until brown. The vegetables will release some liquid. Turn up the heat on the pan and let it simmer out. Warm some whole wheat tortillas and slice the cheese of your choice. Turn the oven up to 500 degrees and let the fries get crispy.
