Lamb, Brat and Chick Pea Stuffed Bread

Who doesn't like stuffed bread? This is a great way to use leftovers.

1 cup grilled lamb shank prices diced
2 beef brats sliced
1 1/2 cup chick pea tomato curry
1 cup shredded cheddar cheese

1 cup whole wheat flour
1 cup all purpose flour
1/4 cup wheat bran
2 teaspoons salt
1 tablespoon active dry yeast
1 tablespoon sugar
1 1/4 cups very warm water
Cooking spray
Bench flour

1 egg
1 teaspoon water
Beat this together

Using a stand mixer with a hook attachment add the flour, salt, wheat bran, sugar and yeast to the bowl. Be sure not to put the yeast on top of the salt. Turn the mixer on stir and slowly add the water until the dough pulls away from the side and forms a ball. Let this run for about 10 minutes. Remove the bowl from the mixer and spray the dough ball lightly with cooking spray. Cover loosely and place in a warm spot to rise. In a medium mixing bowl stir the lamb, sausage and chick pea curry together. After the dough ball doubles in size punch it down and roll it out to fit a large baking sheet. Lay the dough on the baking sheet. Sprinkle the cheese on the dough. Add the filling and and fold the dough, short ends first then the long ends. Rolling the seam to seal.
