Mexican Style Beef Torta Sandwiches

Tortas are a delicious Mexican sandwich traditionally made with slow cooked roast pork. But I think beef is a much better option!

2.5 pound beef top roast cubed
1 onion peeled and cut into eighths
1 Serrano chili
4 cloves of garlic crushed
2 cans beef broth
1/2 can tomato sauce
2 bay leaves
1 tablespoon dried oregano (if you have Mexican oregano use this)
Salt and pepper to taste

1 avocado
Juice from half a lime
Salt and pepper to taste
1 tomato sliced
1/2 yellow onion cut into strips
1 can vegetarian refried beans
Mozzarella cheese sliced
Torta rolls (these can be found in the Mexican store. I'd you can't find these use small baguettes)

Place the onions, garlic, chili, broth, tomato sauce, bay, oregano, salt, pepper and beef roast cubes in the slow cooker on high for 4 hours or low for 8 hours. Once the meat is done warm the beans in a small sauce pan over low heat. Slice the tomatoes and onions, set these aside. Slice the avocado into strips and season with salt and pepper to taste, squeeze on the lime juice and gently stir to coat. Slice the cheese. Cut the rolls in half lengthwise removing the excess bread from inside the top part of the roll. Spread the heated beans on the top bun, layer on the onions, tomatoes, avocado and cheese. Place a spoon full of the meat strained from the broth and seasonings from cooking on the bottom bun. Top and enjoy.
