Oven Braised Lamb with Local Organic Sweet Corn

Lamb is a delicious meat that is similar to beef. This is a great way to prepare it and will leave them asking for more.

4 large pieces of lamb on the bone.
1/2 red onion minced
2 cloves garlic minced
1/4 red, yellow and orange bell pepper chopped
1/2 green bell pepper chopped
4 tablespoons house seasoning halved
2 tablespoon flour
2 tablespoon tomato paste
1 can beef stock
Salt to taste
A handful of chopped parsley for topping
4-5 ears of fresh corn.(if you can buy local, organic do it)
1 tablespoon sugar
1 tablespoon salt

1 stick of butter softened
2 minced chipotle peppers

Season the meat on all sides with 2 tablespoons of house seasoning and coat lightly with flour. Place the meat in a preheated large skillet over medium high heat with 2 tablespoons olive oil. Once the meat is browned on all sides remove it from the pan and add the onions and peppers. Let this cook for 3-5 minutes or until the vegetable become tender. Add the garlic and 2 tablespoons house seasoning. Add the tomato paste and let cook for another minute. Add the beef brother and scrap all the cooked bits off the bottom of the pan. Add the meat back to the pan,cover and place in a 350 degree oven. (if you don't have an oven safe pan you can cover and simmer over medium low heat on the stove top.) bake this 45-60 minutes. Peel the green husks off the corn cobs. Place them in a large pot of water. Add the sugar and salt. Bring this to a boil, let it boil uncovered for 5-7 minutes. This will make the best sweet corn you have ever eaten! Mix the butter and minced chipotles with a fork and slather this on your perfectly prepared sweet condor a fun, kicked up flavor.
