Super Easy Enchiladas

This is simple dish that the whole family will enjoy!

1 can chick peas
1 can Hormel white chicken chili
1 clove garlic
2 teaspoons cumin
Salt and pepper to taste
1 can vegetarian refried beans
Shredded cheddar cheese
10 whole wheat tortillas
1 can red enchilada sauce
1 can green enchilada sauce
1 small onion minced
1 cup chopped baby spinach

Place the chick peas, chicken chili, garlic, salt, pepper and cumin in the food processor. Blend until smooth then place these in a medium mixing bowl. Stir in the refried beans. Place 2 tablespoons of the bean mixture in the center of the tortilla, sprinkle on some of the onions, spinach and cheese. Roll these up and place in a baking dish. Pour the enchilada sauce over the top of the rolled tortillas and sprinkle on the rest of the cheese. Place in a 400 degree oven for 25-30 minutes or until bubbly!
