I like buying day old hot dog buns from the bakery at the super market for really cheap an freezing them. They are perfect for toasted sandwiches, and what is the best toasted sandwich that can be served? None other than the meatball hoagie.
1 1/2 pounds ground beef
1 medium onion minced
2 cloves garlic minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon ground cumin
3/4 cup bread crumbs
2 eggs
1/4 milk
Sliced Monterey Jack cheese
1 can pizza sauce
1/2 cup chopped baby spinach
1/4 broccoli slaw
In a medium mixing bowl combine the beef, onions, garlic, salt, pepper, herbs, eggs, milk and bread crumbs. Combine very well. Roll into 1 inch balls, to prevent the meat from sticking to the hands keep them wet. I keep a bowl of water close by to dip my hands in. Place on cooling racks over baking pans and bake in a 375 degree oven for 30 minutes. Remove from the oven and set aside. Drizzle some olive oil in the bottom of a medium sauce pot over medium heat. Add the spinach and let this wilt for a minute. Stir in the pizza sauce and meat balls. heat through. Make a slit in the top of the buns leaving about 1/2 inch on each end. Lay in a slice of the cheese, add a pinch if the broccoli slaw, spoon 3 meatballs into each slit, top with more cheese. Lace these in a 13x9 inch baking dish, bake at 425 for 35-40 minutes or until golden brown. For more on this recipe or any others please email me at alesia.leach@gmail.com
