This is fast and tasty dish that is as healthy as it is delicious.
1 pound shrimp peeled and deveined
1 package spaghetti noodles prepared according to the package
3 cloves garlic minced
2 shallots sliced thin
2 cups chopped baby spinach
1 cup chicken stock
2 tablespoons butter dredged in flour
Salt and pepper to taste
1 tablespoons olive oil
1 box New York brand Texas toast prepared according to package directions.
Heat a large heavy bottom skillet over medium heat. Add the olive oil, garlic, shallots and shrimp. Once the shrimp start to turn pink add the spinach. Let the spinach start to wilt then add the chicken stock. Let this simmer until it starts to reduce add the butter and stir to melt. Once the sauce starts to thicken slightly then remove from the heat and mix well with the cooked and drained pasta. Serve immediately.
