These are delicious alternative to beef or turkey burgers.
1 can black beans drained and rinsed
1 can chickpeas drained and rinsed
1 medium onion chopped
1 red bell pepper chopped
2 cloves garlic minced
1 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons chili powder
2 teaspoons cumin
1/2 teaspoon dried oregano
1/2 cup seasoned bread crumbs
1/2 cup old gashed oats
1 cup whole wheat flour
4 tablespoons olive oil
In a large heavy bottom skillet over medium heat add the onions, garlic and peppers along with a drizzle of olive oil. In the bowl of your stand mixer with the paddle attachment (a mixing bowl and potato masher will work fine also) add the beans, bread crumbs, oats, salt, pepper and spices. Turn mixer on medium speed. Once everything is well combined add the peppers, onions and garlic. Mix well. Slowly add ten flour 1 tablespoon at a time while on low speed letting each addition mix in entirely before adding more. Party out the bean mixture about 1/2 inch thick. In a large heavy bottom skillet add the 4 tablespoons of olive oil over medium heat. Place the burgers in batches of 5 browning on both sides. Remove from heat and serve. And avocado mayo would be a great addition to this burger. For more on this recipe or any others please email me at alesia.leach@gmail.com
