Everyone loves a crusty steaming hot piece of stuffed bread! This is a recipe that will make you the dinner table rock star!
2 cups all purpose flour
1 cup whole wheat four
1/4 cup wheat bran
1 1/2 tablespoons dry active yeast
1 teaspoon salt
1/2 teaspoon cumin, Kabsah spice and Moroccan seven spice (use your family's favorite flavors)
1- 1 1/2 cups very warm water.
6 small potatoes peeled and cubed
2 tablespoons of olive oil
1 red bell pepper chopped
5 white mushrooms diced
1 onion minced
3 garlic cloves minced
1 cup baby spinach chopped
4 tablespoons butter
1 package of turkey smoked sausage
1 teaspoon salt or to taste
1/2 teaspoon black pepper or to taste
1/2 teaspoon cumin, Kabsah spice and Moroccan seven spice
1/2 cup shredded Swiss cheese
1/2 cup shredded mozzarella
1 egg
1 teaspoon water
In you stand mixer with the hook attachment place 1/2 cup of the AP flour, yeast and 1/2 cup of the water and stir with a rubber spatula. Let this sit for 5 minutes or until it become bubbly. Add in the remaining dry ingredients while the mixer is running on low speed (stir) slowly add the water in until a soft dough ball forms and pulls away from the sides. Once the dough has formed let this run for five minutes. Remove the dough from the bowl and place on a lightly floured surface and kneed by hand for five minutes. Coat with olive oil and place back in the bowl loosely covered with a clean towel and place in a warm place to rise while you prepare the other ingredients. Place the potatoes in a large pot of water, enough to cover the potatoes. Bring to a boil and boil for 10-15 minutes or until the the potatoes are fork tender. Drain and add the butter and spices. Mash with a potato masher and set aside. In a large heavy bottom skillet add the olive oil, onions, mushrooms, garlic and bell pepper. Let this cook for about 5 minutes. Add the spinach and let cook another 5 minutes. Add the sausage and let this cook for about 8 minutes. Add this mixture to the potatoes then stir in the cheese. Once the dough has doubled in size punch it down and kneed it about 10 times on a lightly floured surface. Roll it out to about 1/4 inch thick. Using a cereal bowl cut out circles of the dough. Fill the center with 2 tablespoons of the filling. Rub a small amount of water around the edge of the dough with your finger. Fold the dough over the filling and seal with a fork and cut some vent holes. Beat the egg and water together. Brush the of the pockets with the egg wash.
